As summer rolls around, we look for drinks that bring something fresh to a party, gathering or a good-old lazy Sunday arvo at home. Warm red wine simply won’t do for an afternoon in the sun, by the pool or cowering in the air conditioning because it’s 40 degrees.
It might be news to you, but whisky is the perfect drink for those long summer afternoons. Stick with us! You don’t need a smoking jacket or a chesterfield to enjoy it. Brighten up your whisky with a mixer, something fizzy and top it with a classy garnish and you’re in for a treat.
The Singleton Whisky is making over whisky’s winter-warmer reputation with one simple cocktail recipe that’ll make you turn for the Water of Life all year long. It’s called the Singleton Plus Two, and it goes like this: Take one measure of the Singleton 12-year-old, one measure of flat mixer, and one measure of something with fizz and mix them together. Bam! Instant show-stopper.
The flat mixer could be anything from fruit juice or iced tea to cold brew, or even wine for a sangria-adjacent concoction. The fizz could be soda water (the shred is real), ginger ale or prosecco. #1 The Tropical
Let this Singleton Plus Two carry you to a private over-water bungalow on some Pacific island. The rich caramel notes of the Singleton carry through the bitterness of the grapefruit juice which is, in turn, perfectly balanced by the sweet freshness of lemonade.
Ingredients:
- 50ml The Singleton
- 50ml grapefruit juice
- 50ml lemonade

- Add all ingredients and ice to a glass and garnish with a twist of grapefruit peel

#2 The Orchard
Apple is one of whisky’s best mates, so it’s no surprise this mix goes so well. The whisky’s natural sweetness is lifted by the soda and evened out with the addition of apple and pear juice. Topped with a fragrant sprig of mint, it’s the perfect relaxing cooler to carry you through rolling heatwaves.
Ingredients:
- 50ml The Singleton
- 50ml apple soda
- 50ml apple and pear juice
Directions:
- Add all ingredients to a glass with ice and garnish with a fresh sprig of mint

#3 The Riverside
This one brings back memories of hot days by the river (or pool, or beach, or dam, we’re not picky). The Singleton takes the slight tannin of the iced tea and runs with it to meet the rich ginger and spice flavour of Fever Tree ale. Pour it over lots of ice topped with a wheel of lemon and sip for a cool summer treat.
Ingredients:
- 50ml Singleton
- 50ml Lipton’s iced green tea
- 50ml Fever Tree Spiced Orange Ginger Ale
Directions:
- Add all ingredients to a glass with ice and garnish with a lemon wheel
